Recipe idea for the food trend 2020: West African peanut soup

Ingredients for 6 people

  • 1 tbsp. vegetable oil
  • 1x onion, chopped
  • 1x garlic clove, pressed
  • 1 tsp. salt
  • 1 tbsp. grated ginger
  • ¼ tsp. chilli sauce
  • 600 g sweet potatoe (diced)
  • 3 cups of water
  • 3 cups of tomatoes (sieved)
  • 1 cup roasted peanuts, chopped (or peanut butter)
  • ½ tsp. allspice
  • 2 tbsp. coriander


Preparation (Duration approx. 1 h)

Heat the oil in a pot, add the onion and sauté until translucent. Add the ginger and garlic and fry for 1-2 minutes. Add the diced sweet potatoes, water and salt and boil it. Reduce the heat and simmer for 15-20 minutes until the sweet potatoes are soft. Add the strained tomatoes, the peanuts or peanut butter, allspice and chilli sauce. Puree them with a magic wand and heat them up again. Then garnish with coriander.
